Do we require specific Wilwood brake hose and banjo bolts to use with wilwood brake calipers or the ones that are used in normal road cars will do?

Any fitting that is of the correct size will work. common sizes are M10x1.00, or 1/8 NPT. I believe Wilwood uses the latter but don't quote me on that. the spec will be listed on the product drawing available from their website.

The wilwood we used had NPT threads, but you can tap M10 in it quite easiely

Wilwood has a pretty good site for design. You can filter based on all the important criteria and make your selection from that. I recommend keeping your purchased parts stock- you can get the fittings to adapt the stock part to your system, and it leaves you the option of borrowing components from other teams if necessary.

For every wilwood caliper, they have respective drawings on their website which clearly mentions which type of a fitting(AN or NPT or M10x1.00) is compatible with it. 
Once you select your caliper, go through that drawing and decide on the fitting.
