depends on the individual car being simulated and the overall goals of the team designing said car.  typical values range between 0 deg and 90 deg, though occasionally 360 deg is appropriate depending on what is being simulated.

I dont get you.. How can a car roll more than 90 degrees? A 90 degree would mean the car has toppled right?

In engineering it is important to be able to determine the important information from statements. the rest of this problem I will leave up to you to figure out as I am not going to spell it out more clearly than I already have, partially because I do not think I can make my self more clear.

I think maybe a 180° roll would be more appropriate to a baja. I rarely see them do a full 360. I have seen upwards of 1080° roll though on one occasion...

You can decide the value based on how much tour car will roll actually on the track. If your car is prone to take more sharp turns or turns at high speed then you should simulate for more value of roll. More the speed of turn and sharper the turn more will be the roll angle.

I don't understand how a car can role 180deg even if roles 90deg it'll topple.

I saw Auburn roll 1080 degrees down a hill at UMBC in 2015...
