Can anyone identify these electrical plugs (I'm thinking they're similar to those from an oscilloscope, a BNC connector) and if so what would be the advantage of these compared to others (USB, Ethernet) for an arduino or rasp pi controlled data acquisition system?

From that pic they look like they could be Deutsch circular connectors. the advantage here over USB or standard ethernet connectors would be that they are much better sealed thus keeping water and contaminants out of your electronics.

MIL-DTL-38999 is the spec for the connectors RLM mentioned. Deutsch is one manufacturer of them. 

38999 connectors are standard for military equipment. They're good stuff, if you don't mind the cost and bulk - although they come in all kinds of sizes.
